Healthy Instant Noodle Soup

This healthy whole-foods twist on instant ramen noodles is perfect for work-week lunches.

Simply layer your ingredients in a jar. Start with a sauce, protein (I love tofu or textured vegetable protein), leafy veg and vermicelli noodles. 

When you're ready to eat, pour boiling water over the top and rest for 5 minutes.
