Instructions
Peel the carrots to remove the outer skin and discard. Then continue peeling the carrots lengthwise into thin ribbons using a vegetable peeler or mandolin. Use the guard if using a mandolin for safety.
In a small bowl or jar, whisk together the lime juice, maple syrup, sesame oil, olive oil, cayenne pepper, and salt.
Place the carrot ribbons in a mixing bowl. Pour the dressing over the carrots, add the chopped cilantro, and toss gently to combine.
Let the salad sit for 10 minutes to allow the flavors to meld.
Before serving, garnish with extra fresh cilantro and sesame seeds if desired.
