Ingredients

Cauliflower Wings:

  • 1 medium head of cauliflower about 2.2 lb or 1,000 g; cut into bite-size florets
  • 1 cup unsweetened soy milk 227g, I used soy, but any will work
  • ½ cup all-purpose flour 60g
  • ½ teaspoon garlic powder 1.5g
  • ½ teaspoon onion powder 1.5g
  • ¼ teaspoon salt 1.5g, to taste
  • ¼ teaspoon black pepper 1.5g, to taste
  • 1.5 cups panko breadcrumbs 75g
  • 1 tablespoon sesame seeds for garnish, 7g
  • 1 green onion (spring onion) to garnish, 15g

Teriyaki sauce:

  • ½ cup water 120 ml
  • ¼ cup soy sauce 60 ml
  • ¼ cup brown sugar 53 g
  • 2 tablespoons agave 42g, or maple syrup
  • 2 cloves garlic 8g, minced,
  • 1 tablespoon fresh ginger 6g, minced
  • 1 tablespoon cornstarch 8g

Instructions

  • Preheat the air fryer to 360°F (180°C).
  • Add your cauliflower florets to the bowl, using your hands, coat the cauliflower in the batter thoroughly.
  • Place the panko breadcrumbs in a separate wide bowl. Working in batches, roll each battered floret in the breadcrumbs until fully coated.
  • Arrange the coated florets in a single layer in the air fryer basket (cook in batches if needed). Air fry for 20 minutes, shaking the basket halfway through, until golden and crispy.
  • While the cauliflower cooks, combine the water, soy sauce, brown sugar, agave, garlic, and ginger in a small saucepan over medium-high heat. Bring to a simmer and stir frequently for 5–7 minutes, until slightly reduced.
  • In a small bowl, mix the cornstarch with 1 tablespoon of cold water to make a slurry. Add the slurry to the sauce and stir until thick and glossy. Remove from heat.
  • Toss the crispy cauliflower in the warm teriyaki sauce until evenly coated. Return to the air fryer for 5 more minutes to crisp and caramelize the edges.
  • Transfer the wings to a serving dish and garnish with sliced green onion and sesame seeds. Serve immediately.
