¾cupapple juice
1cupplain yogurtGreek or natural style; I use soy; approx. 250g
2tbspsmooth nut butteralmond or natural peanut butter; approx. 34g
2tbspchia seedsapprox. 37g

Stewed Cinnamon Apple
2largeapplesPink Lady or Granny Smith; diced with peel
1lemonjuiced

Instructions
Make the Stewed Cinnamon Apple
Dice the apples into ½-inch pieces, keeping the peel on.
Add apples, lemon juice, cinnamon, and water to a small saucepan.
Cook over medium-low heat, stirring often, for about 5 minutes or until the apples are tender and most of the liquid has evaporated.
If the mixture looks too dry while cooking, add a splash of extra water. Remove from heat and let cool.
Blend the Oats
Add the rolled oats, apple juice, yogurt, nut butter, chia seeds, vanilla, and salt to a blender.
Blend until mostly smooth and thick, like a pourable batter.
Assemble and Chill
Divide the stewed apples between four jars or containers.
Pour the blended oat mixture over the top.
Cover and refrigerate for at least 1½ hours, or overnight, until thickened.
Serve
When ready to eat, top with extra yogurt, coconut flakes, nuts, or seeds if desired.
