Ingredients
6-8RibsCelery(12oz/325g) chopped
2SmallShallots(70g) sliced
1/3CupRoasted pepitas pumpkin seeds; (50g)
1/2CupFresh parsley leaves(9g) chopped
1/2CupFresh cilantro leaves(12g) chopped
Dressing:
2Tablespoon Fresh ginger(35g) minced
1TablespoonDijon mustard(15ml)
2TeaspoonMaple syrup (10ml)
3TeaspoonLemon juice(45ml)
2TablespoonOlive oil(15ml)
1/2TeaspoonSalt(3g)
Instructions
Trim the ends of the celery and slice into ¼-inch thick pieces. Leave any fresh leaves on, if desired.
Thinly slice the shallots. Roughly chop the parsley and cilantro leaves.
In a small bowl or measuring cup, whisk together the minced ginger, Dijon mustard, maple syrup, lemon juice, olive oil, and salt until smooth and emulsified. Taste and adjust salt or sweetness if needed.
In a large mixing bowl, combine the celery, shallots, parsley, cilantro, and roasted pepitas. Pour the dressing over the top and toss gently until everything is well coated and the shallots are separated into rings.
This salad is best served the same day for maximum crunch and brightness.
