Ingredients

  • 1 teaspoon harissa paste mild or hot; to taste
  • 1 cup sun-dried tomatoes in oil, drained; approx. 140g
  • 2 tablespoons oil from sun-dried tomatoes for roasting
  • 2 15 oz cans butter beans drained and rinsed; approx. 800g total
  • 1 large yellow onion sliced into eighths
  • 2 large sweet potatoes peeled and chopped into 1-inch chunks; approx. 600g total
  • 4 cloves garlic unpeeled
  • ¼ cup tomato paste concentrate, not purée; approx. 66g
  • 1 13.5 oz can coconut milk full-fat, unsweetened; approx. 400ml or 381g
  • 1 teaspoon vegetable bouillon powder or 1 cube, crumbled

To serve (optional):

  • unsweetened yogurt I use soy or coconut, optional
  • fresh parsley chopped, optional
  • toasted sourdough bread or other crusty bread, optional

Instructions

  • Preheat the oven to 375°F (190°C). If using convection/fan, set to 340°F (170°C fan).
  • Slice the onion into eighths and chop sweet potatoes into 1-inch chunks.
  • In a large roasting pan, add the sweet potatoes, onion, sun-dried tomatoes, 2 tablespoons of their oil, harissa paste, bouillon powder, and unpeeled garlic cloves. Toss everything to coat evenly (use gloves or wash hands well after mixing).
  • Roast for 20 minutes, then carefully remove the garlic cloves. Flip the vegetables and return to the oven while you prep the sauce.
  • Peel the roasted garlic and mash it in a small bowl. Stir in the tomato paste to form a thick paste.
  • After the garlic is mashed and tomato paste is mixed in, add this mixture to the roasting pan along with the drained butter beans and coconut milk. Gently stir to distribute everything evenly.
  • Return the pan to the oven and bake for another 15–20 minutes, or until the sauce thickens and the sweet potatoes are fork-tender.
  • Top with fresh parsley and a dollop of yogurt if desired. Serve with toasted sourdough or crusty bread.
