These rich Date Fudge Chocolate Truffles are a delicious whole food snack or dessert, made with just three ingredients and no refined sugar.

18ozMedjool datespitted (approx. 500g)
½cupsmooth nut butteralmond, peanut, or cashew; approx. 135g
1cupdark chocolatemelted (approx. 180g)
Flaky sea saltoptional, for topping
Instructions
Add the pitted dates and nut butter to a food processor. Blend for 2–3 minutes, stopping to scrape down the sides as needed, until a thick, sticky dough forms that holds together when pressed.
If the mixture is too firm for your food processor, add 1–2 teaspoons warm water or a little extra nut butter to help it blend.
Scoop the mixture into about 20 portions (roughly 1 tablespoon each) and roll into balls. Place on a parchment-lined tray and freeze for 10 minutes to firm up.
Melt the dark chocolate in the microwave or over a double boiler until smooth.
Dip each chilled ball into the melted chocolate, letting any excess drip off, then return to the lined tray.
Sprinkle with flaky sea salt while the chocolate is still wet, if using.
Return to the freezer for another 15–20 minutes, or until the chocolate is fully set.

Notes
If your dates are dry, soak them in warm water for 5–10 minutes, then drain well before blending
You may have a little melted chocolate left over depending on how thickly you coat the truffles
Store in an airtight container in the freezer for up to 1–2 months
Let sit at room temperature for a few minutes before eating for the best texture
