Maple Glazed Carrots

Sweet and savory maple roasted carrots with garlic and herbs, caramelized in the oven and perfect for easy weeknight dinners or holidays.

Ingredients

  • 1 lb large carrots peeled or scrubbed; approx. 450 g
  • 2 cloves garlic finely minced; approx. 6 g
  • 2 tbsp olive oil ; approx. 30 ml
  • 2 tbsp vegan butter ; approx. 28 g
  • 3 tbsp pure maple syrup ; approx. 45 ml
  • ½ tsp dried thyme ; approx. 0.5 g
  • ½ tsp dried oregano or dried rosemary ; approx. 0.5 g
  • 1 g fine sea salt to taste; approx. 1–2 g
  • 1 g freshly ground black pepper to taste; approx. 1–2 g

Instructions

  • Preheat oven to 400°F (200°C).
  • Peel carrots, trim the ends, and slice in half lengthwise. Place in a large roasting dish.
  • In a small bowl, whisk together olive oil, maple syrup, thyme, oregano (or rosemary), salt, and pepper.
  • Pour mixture over carrots and toss until evenly coated.
  • Cut the butter into small pats and scatter over the top.
  • Roast for 40–50 minutes, tossing once or twice, until the carrots are tender and caramelized.
  • Remove from the oven, toss once more in the glaze, and adjust seasoning if needed.
  • Transfer to a serving platter and garnish with a fresh sprig of rosemary.
