Equipment

  • Microwave
  • Mandoline

Ingredients

  • 2 large potatoes washed; approx. 600g total
  • tsp salt fine table salt, or to taste
  • 1 large bowl of iced water for soaking potato slices; discard before cooking

Instructions

  • Slice the unpeeled potatoes as thinly as possible using a mandoline.
  • Place the slices in a large bowl of iced water. Gently separate them with your hands, then let them soak for 10 minutes to remove excess starch.
  • Drain the potatoes and pat them dry thoroughly using paper towels or a clean kitchen towel.
  • Arrange the potato slices in a single layer on a sheet of parchment paper cut to fit your microwave turntable. Make sure the slices do not overlap.
  • Lightly sprinkle the slices with salt.
  • Carefully transfer the parchment sheet to the microwave. Microwave on high for about 5 minutes, or until golden and crisp. (Microwave times may vary depending on your model.)
  • Repeat with remaining potato slices.
  • Enjoy immediately for the crispiest texture, or store in an airtight container once fully cooled.
