2largepotatoeswashed; approx. 600g total
⅛tspsaltfine table salt, or to taste
1largebowl of iced waterfor soaking potato slices; discard before cooking
Instructions
Slice the unpeeled potatoes as thinly as possible using a mandoline.
Place the slices in a large bowl of iced water. Gently separate them with your hands, then let them soak for 10 minutes to remove excess starch.
Drain the potatoes and pat them dry thoroughly using paper towels or a clean kitchen towel.
Arrange the potato slices in a single layer on a sheet of parchment paper cut to fit your microwave turntable. Make sure the slices do not overlap.
Lightly sprinkle the slices with salt.
Carefully transfer the parchment sheet to the microwave. Microwave on high for about 5 minutes, or until golden and crisp. (Microwave times may vary depending on your model.)
Repeat with remaining potato slices.
Enjoy immediately for the crispiest texture, or store in an airtight container once fully cooled.
