Ingredients

  • 500 g carrots
  • 1.5 tbsp vegetable oil

Spice coating

  • 1 tbsp cornflour
  • 1 tbsp nutritional yeast optional
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp pepper

To serve

  • sriracha hummus or dipping sauce of choice
  • fresh parsley leaves optional garnish

Instructions

  • Heat oven to 200C/390F.
  • Peel and slice carrots into ‘fries’, about 1.5cm/half an inch wide (don't make them too thin as they will shrink during baking!)
  • Transfer carrot to a mixing bowl, then add cornflour, salt and spices. Mix to coat, then toss with vegetable oil.
  • Spread carrots in a single layer on a lined baking tray lined. Bake for 40 minutes, turning halfway through. If you'd like them really crispy, broil/grill them for an extra 5 minutes at the end, or keep baking until they've reached desired crispyness.
  • Season with extra salt as desired and serve with sriracha hummus or dipping sauce of choice.
