7ozudon noodlesor noodle of choice; approx. 200g
4green onionsthinly sliced; white ends removed; also called scallions
4clovesgarlicminced; approx. 2 tbsp or 28g
2tspred pepper flakesadjust to taste
1tspKashmiri chili powderor any mild chili powder; approx. 2g
1/4cuplow sodium soy sauceapprox. 60ml
1tspgranulated sugarapprox. 4g
2tbspbutteror plant-based margarine; approx. 28g
2tspsesame oilapprox. 9g
1/4cupvegetable oilfor pouring over the aromatics; approx. 50g

Instructions
Cook the noodles according to package directions, then drain and set aside.
While the noodles cook, add the sliced green onions, minced garlic, red pepper flakes, chili powder, soy sauce, and sugar to a medium heatproof bowl.
In a small skillet, heat the butter and sesame oil over medium heat until sizzling and very hot.
Carefully pour the hot butter mixture over the ingredients in the heatproof bowl. It will bubble and sizzle—this is expected! Stir to combine once the bubbling subsides.
Add the drained noodles to the bowl and toss until evenly coated.
Serve immediately, topped with fresh cilantro leaves and sesame seeds (if using).
