Ingredients
¾cuplight brown sugarpacked, (150g)
¼cupneutral oil(60ml)
1/3cupunsweetened apple sauce(78ml)
1teaspoonvanilla extract(5ml)
3/4cupmilk(180ml)
2cupsall-purpose flour(240g)
1tablespoonbaking powder(13g)
½teaspoonground cinnamon(1g)
¼teaspoonground nutmeg(½ g)
½teaspoonsalt(3g)
2cupsfresh blackberries(250g) washed and dried
Streusel:
¼cuplight brown sugarpacked, (50g)
6tablespoonsall-purpose flour(45g)
½teaspoonground cinnamon(1g)
2tablespoonsneutral oil(30ml)
2teaspoonwater(10ml)
Instructions
Preheat the oven to 350°F (175°C). Lightly grease an 8-inch (20cm) square baking pan or line the bottom with parchment paper.
In a small bowl, mix together the brown sugar, flour, and cinnamon. Add the oil and stir until the mixture resembles damp sand. Add the water a little at a time and mix or crumble with your fingers until small clumps form. Set aside.
In a large bowl, whisk together the brown sugar, oil, applesauce, vanilla, and oat milk until smooth.
Add the flour, baking powder, cinnamon, nutmeg, and salt. Stir until just combined. Gently fold in the blackberries.
Pour the batter into the prepared pan and spread it out evenly. Crumble the streusel mixture evenly over the top, pressing it lightly so it sticks to the batter.
Bake for 40–45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Cool in the pan for at least 30 minutes before transferring to a wire rack to finish cooling.
