Ingredients

  • ½ cup almond butter No added sugar or oil; approx. 136g
  • ¼ cup maple syrup Approx. 78g
  • 1 tsp vanilla extract Approx. 4g
  • ¾ cup oat flour Approx. 69g
  • cup vanilla protein powder Unsweetened or lightly sweetened; approx. 40g
  • ½ tsp ground cinnamon
  • ¼ tsp salt Approx. 1.5g
  • plant milk Optional; Add 1 tsp at a time only if dough is too dry

Optional Coating:

  • 1 tsp coconut sugar or brown sugar For rolling; optional
  • ½ tsp ground cinnamon For rolling; optional

Instructions

  • In a mixing bowl, whisk together the oat flour, protein powder, cinnamon, and salt.
  • Add the almond butter, maple syrup, and vanilla extract. Stir until a thick dough forms.
  • If the dough feels too dry to roll, add plant milk 1 teaspoon at a time until it comes together.
  • Roll the mixture into 12 equal balls using your hands.
  • If using, mix the coconut or brown sugar with the cinnamon in a small bowl, then roll the balls to coat.
  • Store in an airtight container in the fridge for up to 1 week, or freeze for longer.
