Watermelon Slushie (easy, 4 ingredients!)

This pretty pink watermelon slushie is healthy, refreshing, and made with 4 simple ingredients. Add rum for a fun daiquiri-style twist!

Ingredients

  • 5.5 lb watermelon rind removed; cut into chunks; approx. 2.5 kg
  • ½ bunch fresh mint leaves only; approx. 15g
  • 1 lemon juiced; approx. 2 tbsp juice / 28g
  • 3 tbsp maple syrup optional; approx. 64g
  • 1 cup water approx. 8 oz / 227g

To garnish (optional):

  • Lemon wedges
  • Mint leaves

Instructions

  • Trim the watermelon, remove the rind, and cut the flesh into large chunks. Place the chunks in a single layer on a lined baking sheet or tray and freeze for at least 24 hours, or until solid.
  • Pick the mint leaves from the stems and discard the stems.
  • Add the frozen watermelon, mint leaves, lemon juice, maple syrup (if using), and water to a high-powered blender.
  • Blend, scraping down the sides as needed, until the mixture becomes a thick, slushie-like consistency. Add more water, 1 tablespoon at a time, if needed to help it blend or if you prefer a thinner texture.
  • Serve immediately in tall glasses. Garnish with lemon wedges and fresh mint leaves if desired.
