Ingredients

Chocolate Blended Oats

  • 2 cups plant based milk such as soy or almond milk; approx. 500ml
  • cups rolled oats old-fashioned oats; approx. 210g
  • 2 tbsp chia seeds approx. 20g
  • ¼ cup cacao powder approx. 20g
  • ¼ cup maple syrup approx. 75g
  • 1 tsp vanilla extract or vanilla paste
  • tsp salt approx. a generous pinch

Chocolate Topping

  • 3 oz dark chocolate melted; approx. 80g

Instructions

  • Add the plant-based milk, oats, chia seeds, cocoa powder, maple syrup, vanilla, and salt to a high-powered blender. Blend on high for about 1 minute, or until mostly smooth. The mixture will be thin—this is expected.
  • Divide the blended oats evenly between 4 small jars or containers.
  • Spoon the melted dark chocolate over the top of each jar.
  • Seal and refrigerate for at least 1½ hours, or overnight, until the oats are thick and the chocolate topping is firm.
  • Store in the fridge for up to 5 days. Enjoy straight from the jar!
