Equipment

  • High powered blender

Ingredients

  • 2 cups raw hazelnuts approx. 284g
  • 3 tbsp cacao powder or unsweetened cocoa powder; approx. 18g
  • 3 tbsp maple syrup pure; approx. 63g
  • 1 tsp vanilla extract
  • tsp salt optional

Instructions

  • Preheat the oven to 350°F (175°C). Spread the hazelnuts in a single layer on a baking sheet.
  • Roast the hazelnuts for 15–20 minutes, or until the skins start to crack and the nuts are fragrant.
  • Remove and cool slightly. Once they’re cool enough to handle, transfer the hazelnuts to a clean kitchen towel. Rub them together to remove as much of the skins as possible. It’s fine if some skins remain.
  • Add the skinned hazelnuts to a high-powered blender. Blend on high, stopping to scrape down the sides as needed, until a smooth hazelnut butter forms. This may take several minutes depending on your blender.
  • Once smooth, add the cacao powder, maple syrup, vanilla extract, and salt (if using). Blend again until fully incorporated and the spread is creamy. Taste and adjust sweetness if desired.
  • Scoop the mixture into a clean jar or airtight container.
