This fresh and light heirloom tomato salad is so simple yet makes a beautiful platter that is the perfect side dish.

- 4-6 heirloom tomatoes sliced, 900g
- 0.5 small red onion sliced into thin rings, 60g
- 1 avocado sliced, 200g
To garnish
- fresh basil leaves to garnish
- 0.5 tablespoon olive oil extra virgin recommended; approx. 7g
- balsamic glaze to drizzle
- 0.25 teaspoon salt to taste
- 0.25 teaspoon black pepper freshly cracked, or to taste
Slice the heirloom tomatoes and spread them out on a large serving platter.
Layer the red onion rings, avocado slices, and fresh basil leaves over the tomatoes.
Drizzle the salad with olive oil and balsamic glaze. Sprinkle with salt and freshly cracked black pepper to taste.
Best enjoyed fresh, as the tomatoes and avocado are most flavorful at room temperature.
