This fresh and light heirloom tomato salad is so simple yet makes a beautiful platter that is the perfect side dish.

Ingredients

  • 4-6 heirloom tomatoes sliced, 900g
  • 0.5 small red onion sliced into thin rings, 60g
  • 1 avocado sliced, 200g

To garnish

  • fresh basil leaves to garnish
  • 0.5 tablespoon olive oil extra virgin recommended; approx. 7g
  • balsamic glaze to drizzle
  • 0.25 teaspoon salt to taste
  • 0.25 teaspoon black pepper freshly cracked, or to taste

Instructions

  • Slice the heirloom tomatoes and spread them out on a large serving platter.
  • Layer the red onion rings, avocado slices, and fresh basil leaves over the tomatoes.
  • Drizzle the salad with olive oil and balsamic glaze. Sprinkle with salt and freshly cracked black pepper to taste.
  • Best enjoyed fresh, as the tomatoes and avocado are most flavorful at room temperature.
