This would make a lovely side dish to a hearty meal like a BBQ or an Italian-inspired dish like lasagna.

Step one: Slice your heirloom tomatoes and lay them out nicely on a big platter.

Step two: Thinly slice the red onion into delicate rings, then scatter them over the tomatoes.

Step three: Slice up your avocado next then place the slices right on top. Then, grab some fresh basil leaves and sprinkle them over everything.

Step four: Drizzle over some olive oil and a little balsamic glaze for that gorgeous sweet tang. And that’s it!

Heirloom Tomato Salad
Ingredients
- 4-6 heirloom tomatoes sliced, 900g
- 0.5 small red onion sliced into thin rings, 60g
- 1 avocado sliced, 200g
To garnish
- fresh basil leaves to garnish
- 0.5 tablespoon olive oil extra virgin recommended; approx. 7g
- balsamic glaze to drizzle
- 0.25 teaspoon salt to taste
- 0.25 teaspoon black pepper freshly cracked, or to taste
Instructions
- Slice the heirloom tomatoes and spread them out on a large serving platter.
- Layer the red onion rings, avocado slices, and fresh basil leaves over the tomatoes.
- Drizzle the salad with olive oil and balsamic glaze. Sprinkle with salt and freshly cracked black pepper to taste.
