Ingredients

  • ½ cup frozen roasted pumpkin or sub with canned pumpkin purée; approx. 120g
  • 1 medium frozen banana peeled; approx. 120g
  • ¾ cup soy milk unsweetened; approx. 180ml
  • 1 tbsp maple syrup approx. 21g
  • 1 tbsp peanut butter natural; approx. 17g
  • ½ tsp vanilla extract
  • ½ tsp ground cinnamon
  • tsp ground allspice
  • tsp ground ginger

Toppings

  • 1 tbsp pepitas optional; pumpkin seeds; for topping; approx. 10g
  • 1 tbsp shredded coconut optional; unsweetened; for topping; approx. 7g
  • 1 pinch ground cinnamon optional; for dusting; or approx. 1/16 tsp

Instructions

  • Add the frozen pumpkin (or pumpkin purée), frozen banana, soy milk, maple syrup, peanut butter, vanilla, cinnamon, allspice, and ginger to a high-powered blender.
  • Blend until smooth and creamy, stopping to scrape down the sides if needed. Add a splash of extra milk to thin it out, if desired.
  • Pour into a glass and top with pepitas, shredded coconut, and a light dusting of cinnamon if using.
