This ultra creamy and mildly spiced pumpkin smoothie is a healthy and refreshing snack for spring or autumn.

Ingredients
- 1/2 cup frozen roast pumpkin or sub with pumpkin puree
- 1 frozen banana
- 3/4 cup soy milk
- 1 tbsp maple syrup
- 1 tbsp peanut butter
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/8 tsp all spice
- 1/8 tsp ground ginger
Toppings
- pepitas (pumpkin seeds)
- shredded coconut
- cinnamon to dust
Instructions
- Combine all ingredients except toppings into a high powered blender.
- Blitz until smooth. Add an extra splash of milk if needed, or stop to scrape down sides.
- Serve into a glass jar and top with a sprinkle of pepitas, shredded coconut and a light dusting of cinnamon.
