2.2lbbaby potatoescut into 1-inch chunks; approx. 1 kg
4green onionsfinely chopped; also called scallions
Hummus Dressing
2/3cuphummusapprox. 160g
1tbspsoy sauceapprox. 15g
1tbspapple cider vinegarapprox. 15g
1 1/2tbspsrirachaapprox. 23g
1tspgarlic powderapprox. 3g
1/2tspsmoked paprikaapprox. 1g
1tbspolive oiloptional for crispier potatoes in air fryer
Instructions
Place potatoes in a large pot of cold, salted water. Bring to a boil and cook for 8–10 minutes, or until just fork-tender but not falling apart. Drain well.
Preheat air fryer to 390°F. Toss potatoes with olive oil (if using), then air fry for 18–20 minutes, shaking the basket halfway through, until crispy and golden.
In a large bowl, whisk together the hummus, soy sauce, apple cider vinegar, sriracha, garlic powder, and smoked paprika. Taste and season with salt and pepper, if needed.
Transfer the hot potatoes to a large serving dish. Drizzle with the spicy hummus dressing and toss gently to coat. Top with chopped green onions. Chill for at least 1 hour before serving.

I prefer to leave the skin on my potatoes, but you can peel it off after boiling if you'd prefer skinless. You can also peel before boiling, but reduce the boiling time by a minute or so, as they will fall apart more easily.
