

Hearty Dhal Curry
Hearty, nourishing and full of flavor, this plant-based dhal curry is packed with lentils, spices and veggiesโperfect for meal prep or cozy dinners.

Ingredients
- 2 red onion sliced into half rings; approx. 2 cups (284g)
- 4 cloves garlic minced; approx. 2 Tbsp (28g)
- 3 cm fresh ginger minced; approx. 3 cm or 15g
- 2 zucchini chopped into ยฝ-inch chunks; approx. 2ยฝ cups (300g)
- 2 tsp curry powder
- 2 tsp turmeric
- 2 tsp cumin
- ยผ tsp cayenne pepper adjust to taste
- 14.5 oz diced tomatoes approx. 400ml or 390g
- 13.5 oz coconut milk full-fat; approx. 400ml or 360g
- 2 cups dried red lentils rinsed; approx. 380g
- 4 tbsp soy sauce low sodium if preferred
- 4 cups water 946ml
- 2 vegetable stock cubes or substitute with 2 tsp bouillon paste
- 1 lime juiced; yields approx. 2 Tbsp (30ml)
- 2 cups fresh spinach loosely packed; about 60g
- 4 tbsp vegetable oil for sautรฉing
- 2 cups cooked rice for serving; approx. 340g cooked
Instructions
- Slice the onions into half rings. Mince the garlic and ginger. Chop zucchini into ยฝ-inch pieces.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the onion and cook for 2 minutes, stirring frequently. Add the garlic and ginger and cook for 1 more minute.
- Remove about one-third of the onion mixture from the skillet and set aside for garnish.
- Add the curry powder, turmeric, cumin, cayenne pepper, chopped zucchini, diced tomatoes, and a generous pinch of salt. Stir well, then cover and cook for 4 minutes, stirring occasionally to prevent burning.
- Add the coconut milk, rinsed red lentils, soy sauce, water, and vegetable stock cubes. Stir to combine. Bring to a boil, then reduce heat to low and simmer uncovered for 20 minutes, stirring regularly. If the mixture becomes too thick, add a splash of water to loosen it.
- Stir in the lime juice and season with salt and pepper to taste. Add the spinach and stir until wilted, about 30 seconds. Remove from heat.
- Serve hot over cooked rice and top with the reserved onion mixture.
