Step one: Mash the banana in a small bowl, then add quick oats, rolled oats, peanut butter, chia seeds, baking powder, melted coconut oil, and a splash of plant-based milk; stir until combined.
Step two: Transfer the batter onto a piece of baking paper and shape into one large cookie.
Step three: Press the dark chocolate chips into the top of the shaped cookie.
Step four: Place the cookie (with paper) into the air fryer and cook until the edges are firm.
Step five: Remove, let rest briefly to set, then serve.

- 1 small banana mashed; about โ cup or 80g mashed
- ยผ cup quick oats approx. 22g
- ยผ cup old-fashioned rolled oats approx. 22g
- ยฝ tbsp peanut butter smooth, natural; approx. 10g
- 1 tsp chia seeds approx. 4g
- 1 tsp baking powder approx. 4g
- 1 tbsp coconut oil melted; approx. 14g
- 1-2 tsp plant-based milk e.g. almond, soy, or oat milk
- 1 tbsp dark chocolate chips dairy-free; approx. 14g
Optional
- ยฝ scoop protein powder optional; about 15g; plant-based if desired
Instructions
- Preheat the air fryer to 360ยฐF (180ยฐC).
- In a small mixing bowl, mash the banana with a fork.
- Add the oats, peanut butter, chia seeds, baking powder, melted coconut oil, and a splash of plant-based milk. Stir until well combined.
- Form the mixture into a large cookie shape and place it on a small square of parchment paper.
- Press the chocolate chips into the top of the cookie.
- Air fry for 10 minutes, or until the edges are golden and the center is set.
- Let cool for 1โ2 minutes before eating. Enjoy warm!
