- 50 g vanilla protein powder optional
- 2 cup soy milk or plant-based milk of choice
- 1 tsp vanilla extract
- 1 tbsp maple syrup or sweetener of choice
- 1 tsp chia seeds

- 1.5 cup frozen blueberries
- 1 tbsp water
- 1 tbsp chia seeds
To serve
- 250 g punnet of fresh strawberries caps removed, quartered
- 1/2 cup coconut yoghurt or plant-based yoghurt of choice
- maple syrup
Instructions
Blueberry Chia Compote
- Add blueberries and water to medium size microwave safe bowl. Microwave on high for 3 minutes and stir. Continue heating for 1 minute at a time until the mixture is steaming hot and blueberries have started to break down.
- Add chia seeds to the bowl and stir well. Leave to sit for 5-10 minutes until the mixture has thickened.
Spiced Chia Porridge
- Combine oats, chia, spices and protein powder (optional) in a small saucepan and mix to combine. Add milk, vanilla extract and maple syrup, then heat on medium until porridge starts to bubble.
- Reduce heat to low and simmer for 5 minutes. Add extra milk if needed to keep the consistency smooth.
- Serve the porridge into bowls, top with blueberry compote, fresh strawberries, yoghurt and extra maple syrup if desired.
