Egyptian Koshari

Koshari is an Egyptian street food made from macaroni, rice, lentils and a tangy, mildly spiced tomato sauce. 

It's topped with crispy fried onions and is ultra savory and more-ish.

It's made using pantry staples that are easy on the wallet - less than $2 per serve. 

Many Koshari recipes take a long time to cook, but this quick recipe (shared with me by an Egyptian friend's mom) is ready in just 40 minutes.

To make Koshari, start by cooking brown lentils, rice and macaroni pasta.

Next, make the tomato sauce with vinegar, za'atar and canned tomatoes.

Coat the onions in flour and pan fry until golden and crispy. Don't skip these - the crispy texture is sooo satisfying!

Serve the rice, macaroni and lentils into bowls, then top with the sauce and onions.

I know the combination sounds unusual but trust me - once you've tried it you will be hooked!
