Substitutions & Variations
- Nuts: Swap pecans for walnuts or almonds.
- Seeds: Sunflower seeds work well in place of pepitas.
- Nut-free: Use sunflower seed butter and omit nuts, replacing them with extra seeds.
- Oil: Neutral oil can be used instead of coconut oil if preferred.
- Spices: Increase cinnamon or add a pinch of cloves for a stronger apple pie profile.
- Apple: Use freeze-dried apple for a lighter, crisp texture.
Storage
Store the granola in an airtight jar at room temperature for up to 2 weeks. For longer storage, freeze for up to 3 months and bring back to room temperature before using.
Expert Tips

Let the granola cool completely on the tray before breaking it up – this is key for large clusters.

FAQ
Adding it after baking prevents the apple from becoming hard or overly dry.
Yes. You can slightly reduce the maple syrup, but the granola may be less glossy and form fewer clusters.
Press the granola firmly before baking and avoid stirring while it cools.
Rolled oats are recommended for best texture. Quick oats will produce a finer, less chunky granola.
