Easy Vegan Granola

Ingredients
- 2 cups rolled oats
- 3/4 cup almonds
- 1/2 cup pistachios
- 1/2 cup coconut flakes
- 1/4 cup chopped dates
- 1 tbsp brown sugar
- pinch of salt
- 3 tbsp coconut oil
- 1/4 cup maple syrup
Optional
- 1 tsp vanilla
- 2 tsp cinnamon
Instructions
- Combine all dry ingredients in a large mixing bowl.
- Melt coconut oil on stove or in microwave. Whisk in maple syrup and vanilla if using.
- Pour wet mixture over dry mixture and mix thoroughly.
- Press mixture into a baking pan, then bake at 160C for 20-25 minutes.
- Allow to cool completely before breaking into small chunks. Store in an airtight container.
