This crunchy Easy Vegan Granola is the perfect energizing breakfast or snack. Made with rolled oats, nuts, dates, and coconut flakes, it has lots of healthy fats to keep you fuelled throughout the day. Serve the granola with yogurt, fresh fruit and milk.


Easy Vegan Granola

Ingredients
- 2 cups rolled oats
- 3/4 cup almonds
- 1/2 cup pistachios
- 1/2 cup coconut flakes
- 1/4 cup raisins or chopped dates
- 1 tbsp brown sugar
- pinch of salt
- 3 tbsp coconut oil
- 1/4 cup maple syrup
Optional
- 1 tsp vanilla
- 2 tsp cinnamon
Instructions
- Combine all dry ingredients in a large mixing bowl.
- Melt coconut oil on stove or in microwave. Whisk in maple syrup and vanilla if using.
- Pour wet mixture over dry mixture and mix thoroughly.
- Press mixture into a baking pan, then bake at 160C for 20-25 minutes.
- Allow to cool completely before breaking into small chunks. Store in an airtight container.
