These Blended Bircher Overnight Oats are a gooey, smooth twist on the classic Swiss breakfast: Bircher Muesli. This recipe is inspired by the healthy and classic Swiss breakfast: Bircher Muesli. Originally created by Dr. Bircher-Benner in the early 1900s at a sanatorium in Switzerland, it was intended to be eaten with every meal to aid digestion and boost overall health from good nutrition. The combination of apple, yogurt, nuts and lemon is balanced and delicious.
Now I LOVE to blend overnight oats – it’s such an easy and fun way to make them taste even more like dessert. Oats are a perfect blank canvas for breakfast puddings, plus they’re affordable and easy to prepare. I’ve tried them in lots of different flavor combos now and they all somehow taste distinctly different. Some of my most popular recipes are my Blueberry Overnight Oats (with an optional chocolate smash top), Strawberry Cheesecake Oats and my Cookie Dough Blended Oats.

Ingredients You’ll Need
Here’s a shopping list of everything you’ll need to make these Blended Bircher Overnight Oats:
- Rolled oats
- Natural apple juice (I made this recipe in collaboration with Eastcoast Beverages – their apple juice is excellent, preservative free and not made from concentrate!)
- Milk of choice (I use soy)
- Nut butter (almond or peanut butter work well, but any will do)
- Chia seeds
- Thick natural or Greek yogurt (when possible, I like to make my own soy yogurt from scratch, It’s plant-based, high in protein and very affordable and surprisingly low effort to make. But you can use any yogurt youโd like.)
- Vanilla extract
- Salt
- Apples (I used Pink Lady but Granny Smith would also work well)
- Lemon

Instructions
Making Blended Strawberry Overnight Oats is super simple and should take you about 10 minutes to prepare.
Step One: Chop apples into small half-inch pieces.
Step Two: Add the chopped apple to a small saucepan over medium-low heat with lemon juice, cinnamon and a splash of water. Stir for a few minutes or until the apple pieces are tender.
Step Three: Add the rolled oats, apple juice, yogurt, chia seeds, nut butter and a pinch of salt to a blender.
Step Four: Blend until mostly smooth. It should be thick and batter like, but still pourable.
Step Five: Divide the stewed apple evenly among four individual jars or bowls. Pour the blended oats mixture over the top.
Step Six: Seal the jars or containers.
Step Seven: Refrigerate for a minimum of 2 hours to allow the oats mixture to firm up.
Step Eight: Top with optional extras like extra stewed apple and yogurt, coconut flakes, or seeds and nuts. I used pepitas, chopped almonds, coconut flakes, plus some extra stewed apple and yogurt.
Step Nine: Eat and enjoy! The oats will keep for up to four days in the fridge.
Substitutions & Variations
- Yogurt: I recommend using an unsweetened natural yogurt, the thicker the better. Greek or pot-set would be great in this recipe for extra creaminess. I use soy myself as it is plant-based and has a similar nutritional profile to dairy yogurt when fortified. I usually make my own soy yogurt from scratch (itโs only 3 ingredients and very hands off – much less effort than youโd imagine, I promise). Coconut yogurt would also taste delicious, but I typically don’t recommend it as an everyday food. It is high in saturated fat and low in protein, so if you do use it, consider it more of a treat ๐
- Nut butter – use a natural, smooth nut butter. I love almond or peanut butter, but any will do.
Storage
Store your Blended Bircher Oats in individual glass jars or airtight containers in the refrigerator for up to 4 days. Enjoy within the first 2 days for best texture and flavor. If you notice any separation, (i.e. if a little water pools on top) it’s nothing to worry about – just mix it back in.
Expert Tips
Although you can eat these oats after 90 minutes, if you want an extra creamy texture, let them sit in the refrigerator overnight. This allows the oats to fully absorb the liquid and flavors.
FAQ
No, you can still make this recipe without blending. It will just have a regular overnight oats texture that is not smooth. Instead of adding the ingredients to a blender, add them to a mixing bowl and mix thoroughly until combined, then follow the remaining steps.
Leave the oats for at least 90 minutes so the oats and chia seeds can soak up all the wet ingredients and thicken it to that perfect pudding-like consistency. It gets thicker the longer you leave it and more pudding like, so leave it overnight for the best results.
No, I donโt recommend freezing. There will be too much separation during thawing.
Variations
Now if you don’t have a blender, you can still make this recipe. It will be delicious, just with some extra texture. I still like to make my oats this way too for variety, like in my Apple Pie Overnight Oats recipe or my Banana Peanut Butter Oats. It’s slightly chewier but in a satisfying way. Instead of blending, simply combine all ingredients in a mixing bowl and stir thoroughly.

- 2 cups rolled oats approx. 240g
- ยพ cup apple juice
- 1 cup plain yogurt Greek or natural style; I use soy; approx. 250g
- 2 tbsp smooth nut butter almond or natural peanut butter; approx. 34g
- 2 tbsp chia seeds approx. 37g
- 2 tsp vanilla extract approx. 8g

Stewed Cinnamon Apple
- 2 large apples Pink Lady or Granny Smith; diced with peel
- 1 lemon juiced
- ยฝ tsp ground cinnamon approx. 1g
- 2 tbsp water
Toppings to serve (optional)
- plain yogurt or serving
- chopped nuts or seeds pepitas, almonds, etc.
- coconut flakes unsweetened
Instructions
Make the Stewed Cinnamon Apple
- Dice the apples into ยฝ-inch pieces, keeping the peel on.
- Add apples, lemon juice, cinnamon, and water to a small saucepan.
- Cook over medium-low heat, stirring often, for about 5 minutes or until the apples are tender and most of the liquid has evaporated.
- If the mixture looks too dry while cooking, add a splash of extra water. Remove from heat and let cool.
Blend the Oats
- Add the rolled oats, apple juice, yogurt, nut butter, chia seeds, vanilla, and salt to a blender.
- Blend until mostly smooth and thick, like a pourable batter.
Assemble and Chill
- Divide the stewed apples between four jars or containers.
- Pour the blended oat mixture over the top.
- Cover and refrigerate for at least 1ยฝ hours, or overnight, until thickened.
Serve
- When ready to eat, top with extra yogurt, coconut flakes, nuts, or seeds if desired.
