Step one: Start by tossing the hazelnuts onto a baking tray and roasting them until fragrant and golden.
Step two: Let them cool slightly, then rub with a clean towel to remove most of the skins.
Step three: Blend the hazelnuts in a high-speed blender until smooth and creamy.
Step four: Add cacao powder, maple syrup, vanilla, and a pinch of salt. Blend again until silky and well combined.
Step five: Spread it on some bread and enjoy!
Healthy Nutella
Equipment
- High powered blender
Ingredients
- 2 cups raw hazelnuts approx. 284g
- 3 tbsp cacao powder or unsweetened cocoa powder; approx. 18g
- 3 tbsp maple syrup pure; approx. 63g
- 1 tsp vanilla extract
- ⅛ tsp salt optional
Instructions
- Preheat the oven to 350°F (175°C). Spread the hazelnuts in a single layer on a baking sheet.
- Roast the hazelnuts for 15–20 minutes, or until the skins start to crack and the nuts are fragrant.
- Remove and cool slightly. Once they’re cool enough to handle, transfer the hazelnuts to a clean kitchen towel. Rub them together to remove as much of the skins as possible. It’s fine if some skins remain.
- Add the skinned hazelnuts to a high-powered blender. Blend on high, stopping to scrape down the sides as needed, until a smooth hazelnut butter forms. This may take several minutes depending on your blender.
- Once smooth, add the cacao powder, maple syrup, vanilla extract, and salt (if using). Blend again until fully incorporated and the spread is creamy. Taste and adjust sweetness if desired.
- Scoop the mixture into a clean jar or airtight container.
