Instructions
Here’s a simple, step-by-step guide with photos to help you create my Date Caramel Chocolates:

Step One: In a bowl, mix together the date caramel and almond butter until smooth. Press this mixture into the tray, about 1 cm thick.

Step Two: Pop the tray in the freezer for 20-30 minutes, or until the mixture is firm.

Step Three: Once set, cut the caramel into bite-sized squares and return them to the freezer while you melt the chocolate.

Step Four: Melt the dark chocolate in a microwave-safe bowl, stirring every 20-30 seconds until it’s completely smooth.

Step Five: Dip each frozen caramel square into the melted chocolate, making sure it’s fully coated.

Step Six: Place them on a parchment-lined tray and sprinkle with flaky sea salt. Freeze again until the chocolate is set!
Substitutions & Variations
If you’re looking to mix things up or cater to specific dietary needs, here are some easy swaps and fun ideas:
- Ingredient Swaps: Not into almond butter? Swap it for peanut butter, cashew butter, or go nut-free with sunflower seed butter.
- Chocolate: If dark chocolate isn’t your thing, you can also try white or milk chocolate—there are plenty of delicious options out there!
- Add-Ins: Add a splash of vanilla, a sprinkle of cinnamon, or even a little espresso powder for a fun twist. You can also fold in some chopped nuts or dried fruits, the possibilities are endless!
Storage
Pop your Date Caramel Chocolates in an airtight container in the fridge — they’ll stay fresh for up to a week (if they last that long!). You can even wrap them in parchment paper for easy grab-and-go treats anytime!
Expert Tips

For super smooth chocolate, melt it in short bursts in the microwave, stirring in between. It keeps it from burning and makes the coating extra shiny and perfect!
FAQ
For sure! Just melt the chocolate on the stove using a double boiler — nice and gentle heat works best.
Totally! You can cut back the dates or use extra nut butter to balance it out.
It’s not, but you can easily swap almond butter for sunflower seed butter to make it nut-free.
You can, but they’re best after chilling for a bit in the fridge to set the chocolate.
