Step one: Peel and slice carrots into thick fries so they don’t shrink too much while baking.

Step two: Toss the carrot fries with corn flour, salt, and your spice mix, then coat them in oil.

Step three: Spread them out on a lined baking tray and bake, turning halfway through so they cook evenly.

Step four: Sprinkle on some extra salt, serve with your favorite dipping sauce – like sriracha hummus – and enjoy!

Oven Baked Carrot Fries
Ingredients
- 500 g carrots
- 1.5 tbsp vegetable oil
Spice coating
- 1 tbsp cornflour
- 1 tbsp nutritional yeast optional
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp pepper
To serve
- sriracha hummus or dipping sauce of choice
- fresh parsley leaves optional garnish
Instructions
- Heat oven to 200C/390F.
- Peel and slice carrots into ‘fries’, about 1.5cm/half an inch wide (don't make them too thin as they will shrink during baking!)
- Transfer carrot to a mixing bowl, then add cornflour, salt and spices. Mix to coat, then toss with vegetable oil.
- Spread carrots in a single layer on a lined baking tray lined. Bake for 40 minutes, turning halfway through. If you'd like them really crispy, broil/grill them for an extra 5 minutes at the end, or keep baking until they've reached desired crispyness.
- Season with extra salt as desired and serve with sriracha hummus or dipping sauce of choice.
