- soy milk (or any plant milk you love)
- maple syrup
- peanut butter
- vanilla extract

Step one: Toss in your frozen banana, pumpkin, milk, maple, peanut butter, vanilla, and all those warm spices. Roasted or purée—whatever you’ve got on hand is perfect.

- ½ cup frozen roasted pumpkin or sub with canned pumpkin purée; approx. 120g
- 1 medium frozen banana peeled; approx. 120g
- ¾ cup soy milk unsweetened; approx. 180ml
- 1 tbsp maple syrup approx. 21g
- 1 tbsp peanut butter natural; approx. 17g
- ½ tsp vanilla extract
- ½ tsp ground cinnamon
- ⅛ tsp ground allspice
- ⅛ tsp ground ginger
Toppings
- 1 tbsp pepitas optional; pumpkin seeds; for topping; approx. 10g
- 1 tbsp shredded coconut optional; unsweetened; for topping; approx. 7g
- 1 pinch ground cinnamon optional; for dusting; or approx. 1/16 tsp
Instructions
- Add the frozen pumpkin (or pumpkin purée), frozen banana, soy milk, maple syrup, peanut butter, vanilla, cinnamon, allspice, and ginger to a high-powered blender.
- Blend until smooth and creamy, stopping to scrape down the sides if needed. Add a splash of extra milk to thin it out, if desired.
- Pour into a glass and top with pepitas, shredded coconut, and a light dusting of cinnamon if using.
